The Mignonas bring to Mozz many years of case farming (the craft of cheese making) and culinary expertise. Luca, who grew up making cheese alongside his grandfather in the Molise region of Italy, worked as a teacher for 6 years at BCAE teaching artisan cheese making and worked in hotel kitchens in 5 star luxury around the world. He founded Wolf Meadow Farm in 2011 and, with help from Christina, moved the farm to Amesbury, MA, where they built and developed a state-of-the-art Italian creamery that supplied Italian-style cheeses like mozzarella and ricotta to residents and restaurants in Massachusetts, New Hampshire and Maine. Christina, who has a background in business and restaurant management, focuses on managing all aspects of the business side of cheese making.

Christina tells us Mozz is slated to open in February, but with COVID-19 still in the picture, that could change. For now, you can get a head start on your cream cheese in Mozz’s online store by signing up to their cheese of the month club (delivery starts in March 2022) or signing up for a cheese making (dates to be determined).

Who are the owners of Mozz and what is their connection to Aquidneck Island?

We live here on Aquidneck Island and are happy to call this place since 2020. My dad grew up in RI so we went here to be closer to family.

What is the store’s vision and what types of products will be in stock?

The store’s vision is a laboratory; a work in progress. Customers will be able to stop and see cheese making, pizza and pasta making, or just come for a quick coffee or a quick bite to go. Maybe customers only visit for the Italian market or for fresh bread. Entering the store is meant to take you back to your favorite bustling Italian markets. The mozzarella will be freshly made every day, reminiscent of the caseifici in Italy.

Sure! Education has always been an important part of what we do. And sharing is just as important to us. These cheese and pasta making classes allow us all to reconnect to the source of taking simple ingredients and carrying them to the sustenance of your day.

What inspired the owner (s) to open an artisanal Italian bakery and cheese factory?

Mozzarella is my husband Luca’s first love, so making cheese became a way for him to recreate the beauty of mozzarella when he couldn’t find something comparable in the United States. And it all kind of blossomed from there. Bread entered the scene because it is cheese’s natural friend for life.

Why did you choose Bellevue Gardens as the location for Mozz?

It is a prime and well maintained location with plenty of parking! We are delighted to be right in the heart of the city, with great complementary neighbors all around us. Honestly this place got there before I think we were ready to open but it kind of just fell into place like everything is meant to be.

How has COVID impacted Mozz’s plans and the opening date?

COVID seems to be the reason for everything these days! It is clear that supply chain management has been affected for all businesses around the world.
